Michelin chef launches luxury country house hotel

A Grade II listed Georgian mansion in Devon has been restored and renovated by two-Michelin star chef Michael Caines MBE.

Caines worked with architect Rud Sawers to create the hotel layout and extension of Lympstone Manor, which is set in 28 acres of countryside with views of the Exe Estuary, while Meraki created the interiors.

The guestrooms are named after birds that live in and around the estuary with each room reflecting its namesake, from the blue tones used in Kingfisher to soft grey textures found in Heron. Many of the guestrooms have their own terraces or balconies to maximize the hotel’s views.

The appreciation of wines, including local wines from Devon as well as from around the world, is a central element to the experience. The hotel has two basement cellars, a wine tasting and dispense room on the ground floor and plans to plant a vineyard on the slope leading down to the Exe estuary.

“The opening of Lympstone Manor is the realisation of a dream. Everything that I have achieved in my long career has brought me to this point where I can fully express my vision of contemporary country house hospitality for the 21st century,” says Caines.
